Harvest
Grapes for the Ridgepoint Wines 2002 Cabernet Sauvignon were harvested
from our escarpment estate vineyards on Cherry Avenue above Vineland
(Niagara Region, Ontario).
Winemaking
Grapes were de-stemmed and fermented in open top bins, where the cap
was submersed regularly by hand. After an extended skin maceration
period the wine was pressed and then stored in small oak casks for two
and a half years. Analysis

Winemaker's
notes
Some classic aromas of mint / eucalyptus and black cherry. The tannins
are firm and mouth coating. In the background enjoy flavours of black
fruits. The finish is dry with firm, pronounced tannins. This wine a
great aging potential. If you still have a bottle in your collection
in 10 years it will be a great pleasure. Food pairings
This wine is a steak's friend. Try with a medium rare grilled
steak or beef carpaccio drizzled with a few drops of truffle infused
olive oil. Also enjoy with your cheese course with hard cheeses
such as Grana Padano or splurge with Parmegiano Reggiano.
